Hines update
Another item of note from the coffee world (and then I can go on blogging about other fascinating topics, like uh… uh…)

Legendary Hines Public Market Coffee, formerly-of-Eastlake is now officially formerly-of-Seattle with their vintage Probat sold off to our pals at Doma Coffee and their future re-emergence most likely to occur in Vancouver.

Didn’t the Elysian Room use Hines? My sister mentioned to me that lately the americanos tasted a bit weak there; is she just crazy or is this because they switched to something else?

Hines is still roasting for their wholesale accounts, though nomadically. They did some roasting down in Portland and I thnk they are getting time on a machine up in Vancouver now.

Hines has been at Elysian, but you should try to get more info from her about that americano, to feel out what she means by weak - and make sure she communicates this to her barista there!
Anywho, Tonx, how is the V2 going? I’m surprised you haven’t dropped a post on it yet…

Hi, just a couple of questions … you do mean Vancounver, BC? And where will Bronwen Serna be creating drinks in the future? I’ve friends in town from Shanghai who want to experience her work. Ciao!

Jimmy - V2 update soon… hopefully we’ll be ready to move the roaster down there in another month or so.
Johnny - Vancouver BC is what I’ve been hearing… but it may all be totally in the planning stages, dunno for sure. Bronwen is pulling some shifts at Vivace for the time being.

Eastlake is a much sadder and far less social place without them… :(
