My neighbor the cheesemaker
My friend Amir and I go back many years, having shared a big communal loft in Brooklyn back-in-the-day(tm). He too left a life of reasonably well paid office/tech drudgery for more artisan pursuits. Based primarily on his history of homebrewing and his enviably refined culinary jujitsu he landed a job as apprentice cheesemaker at Beechers Cheese in Seattle’s Pike Place Market.

You can watch him do his thing most mornings through the large windows facing the market (but don’t tap on the glass - they hate that shit). In addition to busting ass to turn cows milk into yummy cheese and fresh butter, he still finds time to do some amazing photography and keep a mail and webserver humming for his friends.

What’s this, first a link to Tonx photos show up via foodie newsletter in my inbox and now Amir is making cheese! Actually I think I heard something about that a while ago. Well I don’t have anything intelligent to say about coffee except that I like it, but cheese is another matter altogether. I am in fact going on a culinary press trip to Israel at the end of next week thanks to our client the Israeli Dairy Board to visit dairies both artisanal and industrial. Let’s talk soon!
